Legend has it that the word "Briyani" comes from the Persian word "birian", meaning "fried before cooking". The dish itself was inspired by Persian pilafs, brought to the Indian subcontinent by travelers and traders. But it was under Mughal rule that briyani was perfected, elevated, and transformed into the beloved delicacy we know today.
At the heart of this tradition is the Dum cooking method—a slow and sealed style of cooking where marinated meat, long-grain basmati rice, and aromatic spices are layered and steamed together in a heavy pot.
